Chichvarkin Prepares to Open London Restaurant HIDE

By · · 2 min read

In London's Mayfair district, the restaurant HIDE has opened, co-owned by entrepreneur Evgeny Chichvarkin. The project's partners are Chichvarkin's former Euroset partner Timur Artemyev and chef Ollie Dabbous. The opening was reported on 16 April 2018 by ZIMA Magazine.

HIDE is located on Piccadilly, a hundred metres from Green Park underground station. The site was previously home to the Lebanese restaurant Fakhreldine for over 30 years, as well as the Italian restaurant Diverso. HIDE occupies three floors with panoramic windows overlooking Piccadilly and the park; the restaurant can seat 180 guests at once.

The concept is built on the signature recipes of chef Ollie Dabbous, who earned a Michelin star at his restaurant Dabbous, and the wine collection of the shop Hedonism Wines. According to Chichvarkin, the partners plan to “create a true gastronomic utopia” together. To take part in the project, Dabbous closed two of his restaurants — Barnyard and Dabbous.

Three Levels

The first floor (Above) is dedicated to fine dining: guests are offered an 11-course tasting menu with wine pairing for £95 per person. Wine can be ordered in three categories: Classic — £65, Discovery — £115, Hedonistic — £295. On the second floor (Ground) there is a regular menu: breakfasts, dinner without drinks — around £60, and a bakery open around the clock. In the basement (Below) are the wine cellar, a cocktail bar and three separate rooms for private dinners, each decorated in a different theme.

The standard wine list includes 450 entries, and through the Hedonism Wines electronic menu guests can choose from approximately 6,500 wines. Wine delivery takes up to 12 minutes — Chichvarkin's shop is on the neighbouring street.

Details

The design is executed in Scandinavian restraint: pastel tones, natural wood, linen napkins, wild flowers. The spiral staircase was the first purchase for the restaurant back in 2014, when the project was only being planned. Each tabletop has a drawer with charging devices, and the restrooms have Le Labo soaps and creams marked “for HIDE”. Waiters wear linen uniforms with brooches.

The life of the restaurant can be followed on the Hide Instagram account, as well as on the Instagram account The Place for Me to Hide, which Chichvarkin runs and which is largely devoted to wine.
